A cook is required for the Prince Madog, which is moored at Menai Bridge, Bangor, Wales.
3 weeks on 3 weeks off

CATERING DEPARTMENT
The Catering Department is responsible for the provision of food and drinks, the serving of meals, the provision of clean linen, the cleanliness of the public rooms and the provision of cleaning materials and consumables for the bathrooms and cabins.

THE COOK
The Cook is the Head of the Catering Department and is responsible for the orderly and safe operation of his department.
He shall order all the foodstuffs and stores required for his department.
He shall aim to keep his spending on foodstuffs within the budget laid down by the Company. Any short term overspending shall be balanced so that the annual total is within the limit set.
He shall submit accounts to the Company at the end of each month.
He shall keep the expenditure on cleaning and household items to a reasonable level
He shall be responsible for providing three cooked meals a day in the form of a varied and interesting diet. Where possible and reasonable he shall cater for particular tastes such as a vegetarian diet. He shall also be responsible for the provision of light refreshments for persons to prepare for themselves.
He shall ensure that only persons who have completed a Health and Hygiene course assist in the preparation, cooking and serving of food and drink other than that prepared by individuals for themselves.
He shall ensure that the galley, stores, mess rooms, ward room, accommodation alleyways, laundry, public bathroom and charterer's bathrooms are kept clean.
Defects in the operation of equipment must be reported to the Chief Engineer who will arrange for their repair as soon as is practical. New equipment shall be ordered through the DPA.
Any problems with the provision of meals, equipment or maintaining cleanliness shall be resolved through consultation with the Master or be referred to the DPA.
Any problems with safety, health or hygiene should be passed on to the Safety Officer.

HAND-OVER NOTES
The Cook will compile hand-over notes for his relief covering his sphere of responsibility indicating:-
> Any non-standard condition of equipment and any repairs in hand or proposed, any new legislation/instruction/advice/information received.
> The status of stores and those on order.
> The current operations programme and any occurrences that have taken place that will have an impact on the work of his Relief.
